The Dillon Distillery
distillerie Dillon is part of the historical heritage of Martinique. Indeed, the dwelling dates back to the end of the 17th century, then still a sugar plantation. In 1779, it was acquired by Arthur Dillon, freshly arrived in Martinique. Arthur Dillon, bearing the rank of colonel, had distinguished himself by his participation in the conquest of several Caribbean islands (Grenada, Tobago, Saint Christopher) as well as in the American War of Independence. It is still his name that the distillery bears today. But it was not until the 20th century that Dillon Habitation turned to the production of rum.
Dillon Distillery Martinique: The Rum of Martinique
Dillon Distillery holds the AOC label (Appellation d'Origine Contrôlée - Controlled Designation of Origin) and produces three types of rum: white rum, aged rum, punches, and cane syrup. These rums have been regularly awarded at the General Agricultural Competition, notably receiving the following prizes in 2018:
- Silver Medal for the passion fruit punch Dormoy
- Gold Medal for the Bourbon Barrel rum
- Silver Medal for the aged rum Cuvée des Planteurs
The actual distillery activities take place on another site, the Depaz Distillery, belonging to the same brand. Due to its success, Dillon Distillery, owned by La Martiniquaise company since 1981, had to divide its production stages across three sites.
The rums from Dillon Distillery in Fort de France are highly sought after, especially the white or agricultural rums, crafted from locally sun-soaked sugarcane.
Among the range of spirits found at the Dillon distillery, enthusiasts can find white and aged rums for tasting, as well as cane syrup. It's possible to taste vintages with flavors of hazelnut, tobacco, and even licorice.
This Martinique distillery has developed a quality approach and is committed to sustainability and environmental respect from harvesting to production.
Visit to Dillon Distillery
The historic site of Dillon Distillery is located northeast of Fort-de-France, not far from the Ring Road. The distinctive orange building is easily recognizable, but it's no longer open to visitors, especially as the actual distillery operations no longer take place there. Only aging and bottling occur on-site.
On the other hand , the Depaz Distillery will gladly welcome you to discover its production process of Martinique rum during a free visit, with a small museum as a bonus. You will find this distillery in the district of Saint-Pierre.
In fact, the pure water of a river rising from Mont Pelé is the basic ingredient of Dillon rum.
