Habitation Saint Etienne Martinique: Remarkable Architectural Work
Within Habitation Saint-Étienne, the distillery is listed in the additional inventory of Historical Monuments. The gardens of the estate were also awarded the "Remarkable Gardens" label in 2015.
The HSE Casks are located at the center of the estate. They serve as a venue for exhibitions and cultural events. This has been the concept of the estate since its revival in 1994. Therefore, rum tastings take place in this location.

Habitation Saint Etienne: A History Typical of Estates
Similar to what happened with Trois-Rivières estate, Saint-Étienne estate also originated from a sugar mill. In 1882, Mr. Aubéry, a prominent figure in the Martinique economy, played a role in its development by transforming the sugar mill into an agricultural distillery. He subsequently undertook infrastructure renovations. In 1909, the Simonnet family took charge of it before it was acquired by Yves and José Hayot in 1994.
Habitation Saint Etienne Rum: Quality in Production
The expertise of Habitation HSE is highly recognized. It has been certified with the AOC (Appellation d'Origine Contrôlée) label for the quality of the rums it produces. The sugar cane harvest is now mechanized, having previously been done manually. The cane is washed, passed through a mill to extract the juice called "vesou."
After filtration and fermentation in tanks, it undergoes distillation. HSE rum innovates by establishing its own models for maturation, aging, and aromatic criteria. The cocktails and chocolates they offer demonstrate their true creativity.
